To prevent your tortillas from tearing or becoming soggy, quickly fry each corn tortilla
in any oil you like for about 10 seconds on each side, until it starts to get crispy but is still pliable.
This will add a barrier that will keep the tortilla from absorbing too much sauce, and also adds a little extra flavor.
After you remove it from the oil, place the tortilla on a paper towel to absorb the excess oil —
 this will ensure the tortillas aren't greasy.

I buy a rotisserie chicken for the meat. In one bowl mix chicken, onions, cilantro,
two cans of green chiles, and grated cheese. In another bowl mix green enchilada sauce  
with some sour cream.
Then you just layer corn tortillas, chicken mixture, enchilada sauce
etc and throw a bunch of cheese on top.
I also put a little enchilada sauce on the bottom of the pan before the layer of tortillas.
If you cook it to long the tortillas will disintegrate unless you buy thicker ones. Cook at 350 until bubbly 30 minutes or so.

BLACK BEAN CASSEROLE

2 cloves garlic
2 tbs olive oil
1 pound ground turkey  (I use ground or canned stewed beef.)
1 16-ounce can tomato sauce
2 heaping teaspoons chili powder
2 heaping teaspoons cumin
1 small can corn drained
1 can black beans drained
1 can green chiles
8 ounces of shredded longhorn cheddar
flour tortillas (I use Corn Tortillas)
Cook garlic in oil.
Add the ground turkey and brown it up.
Add tomato sauce.
Mix in chili powder and cumin
Mix in the corn, black beans and green chiles
Cook together fifteen minutes.
Now lay flour tortillas in a casserole dish and then layer in the mixture of meat and then cheese and then tortillas and mixture and tortillas and cheese, until the dish is full.
Bake at 350° covered until bubbly and yummy!
Serve.
